Eating With: The Tipsy Epicurean

Beer bonged that Bud? Hit the hooch like a hero? Chugged the
Chardonnay like a champ? Wet your whistle with Whiskey?

It’s time to make yourself something to eat.

This falls less under the drunk food category, as it is also delicious in our uncharacteristically sober moments, too. It’s also healthier than your typical drunk food. Best consumed paired with  anything grilled and a tall glass of Rosé…while reminiscing about past summers spent somewhere beautiful instead of hunched over a $13 grill in the parking lot behind your apartment building.

Fresh Sauteed Corn Salad. Serves 4

6 Ears of fresh corn, shucked and cut from earSauteed Corn Prep 2
1 Small red onion, diced
12 -14 Grape or cherry tomatoes, halved
1 Tbs. Unsalted butter
1 Tbs. Olive oil
1/4 Cup basil, parsley or cilantro (choose your poison), chopped
Salt/Pepper to taste

Sweat onion in butter and olive oil over medium heat until translucent.
Add corn and salt/pepper. Increase heat, sauteing until corn begins
to brown slightly.
Remove from heat, toss with tomatoes and herbage.
Serve immediately.
